The actual collapse mechanism has two parts. First, heat: espresso is hot enough that water evaporates out of the thin liquid film separating each bubble, thinning that film until it breaks. Second, chemistry: free fatty acids from the coffee's oils compete with the surface-active proteins that form a stabilizing "skin" around each bubble, weakening that skin and making bubbles more likely to rupture and merge into larger, less stable ones.
