Why Is My Espresso Sour?

The real difference between desirable acidity and a sourness fault, the specific acids involved, and how roast level, freshness, and processing all play a role before extraction even enters the picture.

Not All Acidity Is a Problem

Before you touch your grinder, it's worth asking whether what you're tasting is actually a fault. Acidity is a real, often deliberately highlighted characteristic of good coffee, not automatically a mistake. A specialty roaster puts it plainly: coffee that's roasted too light for its own development can taste "one-dimensional and sour when brewed, even at proper extraction levels." In other words, a correctly pulled shot can still taste sour if the beans themselves weren't roasted far enough to round that acidity out. That's a roasting problem, not something your grind size or ratio can fix.

Acidity itself is inherent to the bean, and roasting is what manipulates how much of it you actually taste: lighter roasts let more of it through, medium and darker roasts break more of it down. If your espresso tastes sharp specifically with a light-roast bag, that's worth knowing before you assume your technique is at fault.

The Actual Acids Behind Sour Espresso

Sourness in coffee isn't one flavor, it's a mix of specific acids, and they don't taste the same. Chlorogenic acid is the most abundant acid in green coffee; citric acid reads as lemon or citrus, malic acid as tart, apple-like sourness, and acetic acid as something closer to vinegar. Quinic acid, by contrast, is partly created during roasting itself rather than present in the green bean.

Roasting is what breaks these acids down, and the effect is measurable, not just a matter of taste. A peer-reviewed study found that roasting reduced chlorogenic acid content by about 50%. A separate source studying for the Q-grader certification found a similar roughly 50% drop in citric acid by medium roast, and noted that Kenyan coffees tend to run higher in citric acid than Central American origins to begin with, meaning the same roast level can taste more or less sour depending on where the beans are from in the first place.

Fresh Isn't Always Better

It's tempting to assume fresher beans always taste better, but freshly roasted coffee that hasn't rested long enough can actually cause its own extraction problems. Beans retain carbon dioxide right after roasting, and too much retained CO2 can interfere with how evenly water extracts through the grounds, which can show up as an off, sour-leaning taste rather than the clean cup you'd expect from "fresh" coffee.

True staleness works differently: it tends to taste flat and dull rather than sour. Very fresh coffee and very stale coffee can both taste "off," just for opposite reasons.

If your espresso tastes sharp and your beans were roasted very recently, within the last few days, letting them rest a bit longer before brewing is worth trying before you blame your machine.

Where Your Beans Came From Matters Too

How a coffee was processed after picking changes its acidity before it ever reaches your grinder. Natural, or dry, processed coffees ferment as part of drying, which reduces acid levels and increases sugar content. Washed coffees skip that fermentation step entirely, so they don't get that same acid reduction, and tend to taste brighter and more acidic as a result. If you've switched to a washed coffee and noticed more sourness than usual, that's a real, documented difference in the bean itself, not something you did differently at the machine.
