How Fast Is Actually Too Fast
La Marzocco's own reference point for a standard shot is 18 grams of coffee in, 36 grams of liquid out, in 25 to 35 seconds, a roughly 1:2 ratio. If you're hitting that same weight in 10 to 15 seconds, or the stream never really builds resistance and just runs, that's not a small timing miss, it's a sign water is moving through the puck with far less resistance than it should. Check Grind Size First
Grind is the first thing to check because it's the most common cause and the easiest to rule out. La Marzocco Home's own dial-in guide states it as a direct rule: "If your shot finished way before your target time, then water is probably passing through your coffee bed far too quickly. You'll need to adjust your grind finer to help slow down that water flow."
Their process, worth following exactly rather than eyeballing it: purge a small amount of old coffee from the grinder first so you're not testing yesterday's grind setting, adjust the collar while the burrs are actively running (adjusting a stationary grinder risks trapping beans between the burrs and jamming it), purge another 2 to 3 seconds after adjusting to clear grounds set at the old size, then pull a shot with everything else held constant, same dose, same ratio target, same tamp. If a newly adjusted grinder won't start afterward, that's very likely beans stuck between the burrs, not a broken grinder; going coarser again usually clears it.
Check Your Dose Against Your Basket
If grind adjustments alone aren't closing the gap, or you're already near the fine end of your grinder's range, the next candidate is dose, and specifically whether it matches the basket you're using. Barista Hustle's own explanation of why comes down to basic fluid physics rather than opinion: by Darcy's Law, the flow rate of water through a porous bed like ground coffee is proportional to the bed's permeability and inversely proportional to the distance the water has to travel through it. A shallower bed of coffee, whether from a genuinely low dose or from using a basket sized for more coffee than you're actually putting in it, is a shorter distance for water to cross, and shorter distance means less resistance and faster flow, independent of grind size.

Petracco, in Espresso Coffee: The Science of Quality, 2005) used in coffee-science courses: doubling your dose roughly halves your flow rate for a given grind size, and a shallow bed is also more prone to channeling in the first place. That's the real reason "just use less coffee" isn't a free fix — a shallower bed can trade a fast, even flow problem for an uneven one.
In practice: if you're dosing noticeably under what your basket is sized for (a 20g basket loaded with 15g of coffee, for instance), that mismatch alone can explain a fast shot even at a grind setting that should otherwise be correct. Dosing to match the basket, then adjusting grind from there, isolates the two variables instead of changing both at once.
Tamp Evenness
An uneven or tilted tamp gives water an easy, low-resistance path down one side of the puck, which can look like an across-the-board fast shot even when the average flow rate is fine everywhere else. Worn Baskets: A Real Question Nobody's Fully Answered Yet
It's a reasonable question: do a basket's holes wear open over thousands of shots, and does that eventually let water through faster? Robert McKeon Aloe, an engineer who publishes detailed image-analysis data on his own espresso equipment under the name Coffee Data Science, tried to answer exactly this by comparing microscope images of the same VST basket's holes across roughly 2,000 shots over two years. His own conclusion, in his words: "I don't know the answers, and this work is the start of trying to answer these questions." He found some shift toward larger holes on parts of the basket, but no clear, systematic pattern, and was explicit that his data wasn't sufficient to confirm the wear actually changes how a shot pulls.
We're including this because it's a genuinely honest data point rather than because it resolves anything: basket wear is a plausible contributor to a fast shot after years of heavy use, but even someone measuring it directly hasn't established that link with confidence. If your basket is old, cheap, or visibly damaged (bent, or with holes that look different size to the eye), it's worth ruling out by testing with a different basket, but we can't tell you it's a documented, confirmed cause.
