Citric acid, the most common ingredient in commercial descalers, works by chelation: it binds to calcium and magnesium ions and turns them into water-soluble citrates that rinse away easily.

A real ingredient list backs this up. Urnex's Dezcal, a widely used multi-brand descaler, lists citric acid at 30 to 60 percent, sulfamic acid at 1 to 5 percent, and a small amount of an aluminum sulfate salt, likely acting as a corrosion inhibitor, according to its own safety data sheet. The single-dose kits sold by individual manufacturers are built on similar underlying chemistry, just packaged and priced differently.

Does Plain Vinegar Actually Work?

Plenty of people use plain white vinegar instead of a dedicated descaler, and the honest answer is that we couldn't find strong, authoritative sourcing confirming exactly how well it works or a specific recommended ratio. What's out there is mostly forum-level consensus rather than tested guidance from a credible source, so we're not going to hand you a precise dilution and pretend it's more settled than it is. One real, sourced mechanism exists for rubber components: Marco Rubber, an industrial elastomer supplier, documents that rubber exposed to acetic acid can swell, soften, lose strength and flexibility, and crack. Worth being precise about, though: that data describes acetic acid at 25 to 60 percent concentration. Household vinegar is around 5 percent, roughly a tenth of that. The mechanism is real; whether it plays out meaningfully at kitchen-vinegar strength over the length of one descaling cycle is a different question we don't have a direct answer to.

There's a second, more specific claim worth including with its source clearly flagged: Alliance Chemical, a company that sells food-grade citric acid, states that aluminum boilers, found in some older Saeco and Gaggia Classic machines and in every stovetop moka pot, can pit permanently from repeated acetic acid exposure, sometimes failing within six to eighteen months. That's a real, specific, checkable claim, though it comes from a seller with a commercial interest in citric acid looking better than vinegar by comparison, and we didn't find it independently corroborated elsewhere.

Here's the part that actually complicates the simple version of this story: the same source states that high-concentration citric acid also pits aluminum. That's not what you'd expect if the real story were just "vinegar bad, citric acid good." The more accurate takeaway, based on what's actually sourced, is that concentration and boiler material matter more than which acid you pick. A stainless steel boiler at low concentration is a different situation than an aluminum one at high concentration, regardless of what's in the bottle.

If You Use Citric Acid Yourself: Ratios and Rinsing

Because this comes from a company selling the product, treat the exact numbers as a reasonable starting point rather than an independently verified standard, and check your machine's own manual if it gives one.

Rinsing matters more than people expect. The same source recommends running at least three full reservoirs of plain water through every outlet the descaling solution touched, four if your water is hard, and notes it can take eight to twelve espresso pulls before any residual acid taste fully clears. Skipping straight from descaling to your next cup is where a lot of "my coffee tastes like chemicals" complaints actually come from.

What It Actually Costs

For comparison, real current prices: Nespresso's own kit runs $10.99 for two doses, Breville's for $19.95 for six. Urnex's Dezcal, a multi-brand option, was $8.95 for three doses at the retailer we checked. Plain food-grade citric acid powder runs around $8.99 for a full pound, which works out to dozens of doses at the 15-to-25-gram range above, by far the cheapest per-use option if you're comfortable measuring it yourself. Plain white vinegar is the cheapest of all as a grocery staple, though we don't have a sourced per-use cost to put a number on, and it comes with the seal and aluminum caveats above that citric acid doesn't carry to the same degree.
